you need to buy one that can handle what your panels can produce at max output plus a little.
say you want 26kw but your panels can produce 35kw on a good sunny day. If you buy a 30kw inverter, there is a good chance you will fry it.
My advice is read up on your panels and find out what the max they can produce is and then start looking. Even though you will have some loss in the transfer and conversion from ac to dc, it is still better to buy more than you need. That way you can upgrade at a future date if you decide you want more and dont run the risk of having power trip failures or even worse destroying your entire system.
There is alot of information available on this topic on the internet if you search for how to choose and inverter. Some will give you a formula, say 110% of desired output, others will say this is not needed. I Have Some 24 Volt Solar Panels At About 44Volts And 5 Amps Max Each, And I Was Wondering If I Could Attach My Two 12Volt Batteries In Parallel To Have A Bigger Capacity Instead Of 24 Volts Through Series Through The Xantrex C40 Charge Controller And Have It Set To A 12Volt System, It Says It Can Handle Up To 125 Volts. But If I Was To Do That And The Xantrex Even Could Reduce The Voltage Down To 14Volts Or Whatever For Charging, Would The Amps Even Increase At All? Also, Does Anyone Know If This Would Be Safe Or Potentially Damaging To The Charge Controller? Thanks

Reading the manual I see the charge controller will dump the extra voltage, so you can put the batteries in parallel if you really want to, but it is not a good idea.

The capacity of the batteries is not higher if they are in parallel. Also, when the controller dumps the extra energy you are wasting it.

The total energy of the batteries is the same in series as it is in parallel. Power is volts times amps, so 12V at 10 amps is 120 watts, and 24v at 5 amps is also 120 watts. The only problem is you need to match the battery voltage to whatever device you are powering. If you have 12 volt lights or other 12 volt devices, you need to supply them with 12 volt power. But if you have 24 volt light they will use half the amps at twice the volts to give you the same amount of light for the same amount of time.

Also, I think with some creative placement of diodes you could connect the batteries in series to the charge controller and also in parallel to the load without shorting anything out.
