This is actually a very astute question and I feel the answers thus far either don't give a sufficient answer, or are just plain wrong.

As you correctly described, Io is in an eccentric orbit around Jupiter. This causes it to feel varying gravitational fields as it orbits. These varying fields in turn cause the moon to become stretched and squeezed as the field changes.
Now what happens when you stretch and squeeze a lot of rocks? They rub against each other. Usually however, the way it works is you need to apply a certain amount of force before the rocks will slip. This means that when they do snap it creates a lot of energy. In fact we see these type of "Slip-Strike Faults" here on Earth all the time. It's similar to you bending a stick. It takes a certain amount of force before the stick finally snaps. Now when the rocks of Io do snap, they expend a ton of energy.
This is where the energy comes from. The energy comes from the fact that the stretching and squeezing of Io is basically breaking it. When the rocks break they create energy in all sorts of forms such as Ioquakes (Earthquakes but on Io), sound, and most important heat. This heat is what's allow for magma to form and pressures are the cause of volcanic explosions.
As I stated, we see the same things here on Earth. However our volcanoes and earthquakes are caused by the fact that the Earth is cooling and equilibrating, but the principles are the same. The source of energy for our volcanoes comes from the interactions of constantly changing and breaking plates.
So really all that volcanism is nothing more than Io releasing it's own energy that is stored inside the contents of the planet. It is not stealing energy from anywhere and using that to cause the volcanism.
