Hey Nick, that 30 pound trolling motor will use about 18 amps at full power, but about 60%, or 12 amps at the next setting down from full. The fish finder will use less than 1 amp. We have a similar setup here for our fishing boat, but since weight is not such a problem, I have 2 Trojan T-105 golf cart batteries for storage, which when wired in series give you 220 amp hours at 12 volts.
A mid level deep cycle trolling battery will weigh around 60 pounds and hold about 80 amp hours at 12 volts. What this means in theory is you can pull 80 amps out of it before it is completely discharged. So if you ran your motor for 4 hours at full power, the battery would be basically exhausted. In reality, only the top 60 % or so of the battery is available, and after that the voltage falls dramatically. The fish finder will quit once below about 9.5 volts, and the trolling motor will run much slower. So figure on about 2 hours of motor time at full power, and another 5 hours on the fish finder if you turn off the motor the rest of the time.
As far as solar charging, panels generally make about 10 watts per square foot today, give or take a few watts. You need 18 volts normally to charge a 12 volt battery, so that means an 18 watt panel will put out 1 amp in good sun, a 36 watt panel will put out 2 amps, and so on. Your real problem with the kayak is space for the panel. Obviously buying one to run the motor at full speed is not possible, 18 volts X 18 amps comes to about 350 watts, which would take up the space of 5 kayaks, and cost about $700 USD. If you could squeeze a 30 watt panel on the deck someplace, which might measure 12" X 30" then you would have a 1.8 amp charger when the sun was out. That would run the fish finder and put about 1 amp into the battery. If you ran the motor on various speeds half the time for 4 hours, you would likely use about 40 amp hours, or half the battery. The panel would run the fish finder and put 4 amp hours, or 10% of the motor use back in the battery during the same 4 hours.
You can find panels this size and similar ones on ebay and other sites, a 30 watt panel might cost you $60 USD, and since the amp output is less than 2 % of the battery's amp hour capacity, you would not need a charge controller, the panel will not be able to overcharge the battery. Controllers cost more money and are prone to breakdown, specially in water environments. All you need is a diode to keep the panel from draining the battery at night, and most panels come with them installed in the junction box already. If not, you can get one at Radio Shack, or similar store for about $1. I would also expect the trolling motor to be ample thrust for yoru kayak, with a streamlined hull and maybe 300 pounds total weight (rider, battery and accessories) it will likely do 5 to 6 miles per hour, about as fast as you can paddle at full speed. The easiest way to connect a cell phone to a solar charger would be to use a 12VDC car charging adapter and wire to a 12VDC Solar panel.
You can use a cigarette lighter socket to plug the cell phone adapter into, use a Y splitter forund at Radio Shack and cut off one of the sockets and wire it to the Solar Panel.

To get full output voltage you will need bright and direct sunlight.
To be honest you would be better off just showing that some power is being produced using a Volt meter and/or lighting an LED. You might be able to get a very small motor to turn, a tiny cooling fan such as this one only draws 70mA
A 12VDC solar panel won't work well indoors in a science fair even if you illuminate it with a flood light. However it will work well enought to generate several volts under such conditions.
I would use a Volt meter to measure the Voltage generated and then see what effect shading , orientation and types of light have on the amount of voltage generated. Collect that data and plot on a graph.

If it's magnetic, it's probably steel which means its going to rust, at least at the cut edges if it's epoxy painted.
You can't solder butt edges in thin material. You can't really join them at all reliably.
You could put tape over or underneath the gap, short term. Or you could try riveting another piece of metal across, with some sealant between, but that needs some clearance on the underneath. Or sheet-metal screws.
It's quite hard to waterproof things reliably - you either need gaskets, or rely on gravity and overlap things (e.g. flashing). On the bottom edge of your panel, if I understand right, water is going to run down the panel and under the border. It may be best just to drill drain holes so it won't collect in there, if the panel can withstand occasional wetting but not submersion.
